You Can Have Your Coffee Cake and Eat It Too!
Nothing accompanies a freshly brewed cup of coffee so much as a slice of delicious coffee cake. Unlike the name implies coffee cakes (also known as teacakes) do not necessarily contain coffee as an ingredient. Their name is derived from the fact that these cakes traditionally accompany coffee or tea. Today’s coffee cakes are a far cry from those served in your grandmother’s day, which were often dry and crumbly, although many traditional ingredients have been updated and given a modern twist. These coffee companions today are able to stand alone as real cakes in their own right. With a wide variety of ingredients such as apples, pecan, pumpkin, cinnamon and new recipes being thought up all the time, coffee cakes are becoming a must as partners to your favourite caffeinated brew. These cakes are easy to make and for the time conscious they can be made ahead of time and frozen. To reheat simply warm in microwave in a low setting covered with plastic wrap. They also generally keep for a few days in an airtight container however, rarely do you need to worry about any leftovers! Old favourites such as pecan pie, apple streusel and cinnamon teacake have been joined by newcomers such as carrot and date roll, orange and poppy seed loaf and bee-sting cake (so named because honey is a main ingredient). Mostly these cakes need no embellishment but for a real treat try serving them with a dollop of whipped cream or a scoop of ice cream. So next time you have friends over for a cup of coffee why not spoil them with a slice, or two, of your freshly baked coffee cake.
